Sun Pork Roast

Rice &

Beans

**make extra rice and save in container for Tuesday.  I usually buy a 4 or 5lb pork roast and cook it in my slow cooker for 8-10 hours. I use this rub and the meat is amazing!
Mon Balsamic Chicken with veggies You have to try this recipe for the chicken. It’s for baked chicken but I had my husband grill it and WOW! Best chicken ever. I am serving this with broccoli (I have stocked up on frozen veggies)
Tues Sausage served over Red beans and rice I am trying a new recipe this week. If I like it, I will post it for you! **use the saved rice container from Sunday
Wed Breakfast! Yay my nephew is cooking tonight 🙂 Eggs, bacon and pancakes.
Thur Beef and potato stir fry 2lbs ground beef and 4-5 small potatoes cut into cubes.

Cook potatoes in large pan with 1 tablespoon olive oil. Stir for about 15 mins until potatoes start to soften. Add in the beef and cook until done. Try to use lean ground beef so you don’t have to drain the mixture when its finished. I add seasonings once its cooked. Salt, pepper and garlic to taste.

Fri Chicken, potatoes and green bean bake 3-4 chicken breast cut into cubes. 2-4 potatoes, peeled and diced, 2 cans of green beans. Put the ingredients in a large baking dish, cover with foil and bake at 350 degrees for about 45-60 mins.
Sat Leftover night or sandwiches  No Cook Saturday

 

This week will be a lot of chicken. We bought a large bag of chicken from Costco last week and need to use it up. I have most of the ingredients on hand for the dinners above. I’m glad because I can fit some treats into the grocery budget that the kids want this week and make birthday cupcakes for my nephew!

 

My shopping list looks like this:

Pork Roast

Sausage

Bacon

2lbs ground beef

Red beans-dry

Flour

1 loaf of bread

lunch meat and cheese

2 gallons of milk

3 dozen eggs

5 lb of potatoes

 

I like to keep my side dishes simple! We usually will have veggies or a salad. I buy frozen broccoli and cauliflower all at once so I have it on hand. I also bought a 12lb bag of organic brown Jasmine rice from Costco. I make it my Rice Cooker, so easy and it’s kinda a set and forget. I love it. Check your local thrift store. Mine is a hand-me-down from my sister and she bought it a thrift store. You can also try amazon, the one pictured below has great reviews! Hope you like the dinner ideas.
