Best Rice Cooker Jasmine Rice

 I love this recipe because it’s super easy. The rice cooker that my sister gave me is old- looking, but works great! My sister found it at a thrift store and it stayed out in my garage for months! About two months ago I decided to try it out. My first attempts were horrible. I tried making Spanish Rice–I got my poor sister- in -law all hyped out about how great this rice was gonna turn out and talking about how easy it is to literally pour in ingredients and set and forget! Unfortunately, the rice was a flop! A little crunchy in some spots and a little too moist on others. I was annoyed, but not defeated! I tried different recipes until I made the best–non crunchy or too moist rice.

For this recipe I used organic brown rice I bought at Costco. We have rice 1-2 nights per week with dinner. I love that rice is inexpensive, a real food, and versatile. I make a big batch (4 cups at a time) and have plenty leftover for lunches and/or another night’s dinner–like easy fried rice or red beans & rice or cheesy chicken and rice bake. I’m sure you can come up with more ideas.  The Jasmine Rice is a hit with my hubby, but not so much with my son (the picky eater) the girls love it though, so 3 out 4 is good enough for me! If you don’t have a rice cooker, you can try looking for one at your local thrift store or try amazon. You can also try asking friends or family if they have one lying around. I probably would have given mine away since I had it in the garage for so long. But, I am so glad that I started using it. I love using the rice cooker because it saves me time. I usually start cooking dinner at 2pm during the weekdays. I work Mon-Fri from 4pm-11pm so I have to have dinner ready early. I can turn on the rice cooker a few hours before dinner and it has a warm feature to keep the rice at a perfect temperature. My rice cooker also has a steamer basket, so I can place veggies on top and have them cook along with the rice. Two side dishes at once, too easy!
