Simple Kale Salad

 

Last night was pretty scary. And by that I mean I got no sleep. That’s scary enough for me! My 3 yr old was restless. She was up at 11pm. Again at 1am and she fell out of bed around 3am. Seriously. I couldn’t make this up.

By the time 5 am rolled around I was snoozing my alarm and rethinking this whole co-sleeping thing!

Lucky for me I had pre-planned the night before and had a container filled with this super simple Kale Salad and some chicken breast for lunch.

DSC02083I was able to straighten my hair, dab on some makeup, get dressed and RUN out the door. All of these activities were done kid free, cause you know my daughter was sleeping soundly.

Uhh. Yes. I was tired all day. Work was fun. But it’s work.

By lunch time I was ready to eat the kale salad (which I know you’ll love.) And not surprisingly, I was also ready for my 3rd cup of coffee.

oh, did I tell you that I had my hand in a toilet this week? Yeah. #Momlife

Anyway. Enough about toilets and sleepless nights. I’m sure you live enough of that out. Here’s an awesome recipe that’ll convert you into a kale salad eater in no time!

ps. am I the only one who thought kale was just a garnish??

 

 

For the Kale Salad

1lb bag of pre-washed Kale

1/3 cup dried cranberries

1 cup of sliced almonds

Mix together in a large bowl and set aside. 

 

For the Vinaigrette

1/2 cup olive oil

1/3 cup apple cider vinegar

1/2 cup maple syrup

1 tsp dijon mustard

1 green onion –cut off the white bulb part

1/2 tsp salt

1/2 tsp pepper

Mix all ingredients into a blender and blend until smooth. Pour over the salad and refrigerate for at least 30 mins. 

I love how simple this kale salad is. Perfect for making a large batch and keeping in the fridge for healthy meals during the week. I paired with grilled chicken!

  3. The salad looks wonderful! I used to get a tasty kale and chicken salad at Trader Joe’s a lot, but I haven’t made my own. I just learned about all of the different kinds of kale recently, but now I can’t keep track of the differences! I’m a creature of habit and eat a lot of romaine lettuce. Time to try this!
