Easy Meal Planning: Crockpot Meals

Crockpot dinners are such timesavers. Here are a few simple recipes.

Salsa Chicken + Instant Pot Rice 

No recipe for this one but I’m sure you can google it. I just like to throw it together: frozen 3-4 chicken breast, seasoning (cumin, salt, garlic, chili powder) topped with jar salsa and set to cook on high for 4-5 hours or on low for a bit longer. When fully cooked shred and serve over white rice or in tacos.


Chicken Dumplings 

Okay, so this one seems like it has a ton of ingredients and I know we’re trying to keep it simple. But….the ingredients are simple and the reviews on this recipe make it worth it!

Ingredients:

1 onion, chopped
1 1/4 lb. boneless skinless chicken breasts
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
2 (10.5-oz.) cans cream of chicken soup
2 c. low-sodium chicken broth
4 sprigs fresh thyme
1 bay leaf
2 stalks celery, chopped
2 large carrots, peeled and chopped
1 c. frozen peas, thawed
3 cloves garlic, minced
1 (16.3-oz.) can refrigerated biscuits


Mexican Pinto Beans

I love finding easy recipes that you can tweak to your liking. I use this recipe as inspiration. I leave out the liquid smoke and add jalapeños into the crockpot. Try it and change it up to suit your tastebuds.

Ingredients: 

2 cups dry pinto beans
6 cups vegetable broth
6 garlic cloves, minced
1/2 medium onion (about 1 cup), diced
1 7-ounce can diced green chili
3 roma tomatoes, diced
1 tablespoon cumin
1-2 teaspoons salt
1 teaspoon oregano
1//4 teaspoon cayenne
1/2 teaspoon liquid smoke
Cilantro for garnish
