Lunch and dinner DO NOT have to be a certain type of food. Try cooking an extra meal when you have more time and use it for lunch the next day or use it for dinner the next day.
Sheet pan meals are the best because they are easy and require very little clean up!

- 1 lb baby potatoes, cut into 1/2 inch pieces (I used baby tri color potatoes, yukon gold or red potatoes also work)
- 3 ears of corn, husks on or wrapped in foil
- 4 garlic cloves, minced
- 1 tablespoon creole seasoning

- 3 medium yellow potatoes cubed
- 1 cup sliced mushrooms
- 2 cups chopped bell peppers about 1/2 green bell pepper, 1/2 red bell pepper and 1/2 yellow bell pepper
- 2 cups halved Brussels sprouts
