Easy Meal Planning: Sheet Pan Lunch/Dinner Ideas

Lunch and dinner DO NOT have to be a certain type of food. Try cooking an extra meal when you have more time and use it for lunch the next day or use it for dinner the next day.

Sheet pan meals are the best because they are easy and require very little clean up!

Don’t forget for any of the dinner ideas you can add a side of veggies or a side salad to make a complete meal.

Chicken + Potatoes & Greens 

Ingredients: 3 chicken breasts, 4 medium red potatoes, green beans (or broccoli), 1/2 stick of butter, melted, Italian dressing mix packet


Shrimp boil

Ingredients:

  • 1 lb jumbo shrimp, peeled and deveined
  • 13 ounces andouille sausage, sliced into 1 inch rounds
  • 1 lb baby potatoes, cut into 1/2 inch pieces (I used baby tri color potatoes, yukon gold or red potatoes also work)
  • 3 ears of corn, husks on or wrapped in foil
  • 4 garlic cloves, minced
  • 1 tablespoon creole seasoning

Sheet Pan Sausage and Vegetables 

Ingredients: main things you need below + click to view the recipe to make sure you have the spices needed, if not just wing it!

  • 12 oz sausage any kind that you like, sliced in rounds
  • 3 medium yellow potatoes cubed
  • 1 cup sliced mushrooms
  • 2 cups chopped bell peppers about 1/2 green bell pepper, 1/2 red bell pepper and 1/2 yellow bell pepper
  • 2 cups halved Brussels sprouts
